The Ultimate Meatsmith Cheeseburger

Salty, savoury and oh-so satisfying, a classic cheeseburger is serious comfort food. While everyone's got their go-to technique, here's the Meatsmith method for creating juicy burgers, every time. 

Ingredients

Pasture-raised beef patty

Martin's Potato Roll

Quicke's Cheddar

Burger Sauce

Zuni Pickle

Getting started

Begin by preparing all you need to perfect your cheeseburger. Find a wide, flat frying pan and preheat a fan-forced oven to 180C.

Thinly slice a block of Quicke's cheddar.

Flatten each burger patty slightly until it is the same sized disk as the bun. Season each patty with plenty of sea salt and freshly cracked pepper.

Heat the frying pan over medium heat then add a knob of butter and a dash of neutral oil.

Toast the inside of the bun until golden then place it to the side while the burger patty is cooked.

Cooking the burger patty

Wipe out the frying pan used to toast the bun then add more oil.

Make sure the pan is heated to high before gently placing the burger patty into the oil.

In order to make sure there is full contact of the patty to the pan, use a Chef's Press to evenly weigh down the burger. Allow the patty to cook for 2-3 minutes.

Flip the patty and cook for one minute then add thin slices of cheese.

Place the burger into the preheated oven and cook until the cheese has melted.

Finishing & assembling the burger

Place the burger into the preheated oven and cook until the cheese has melted.

Take the burger patty out of the oven the allow to rest for one minute.

Drain the Zuni pickle on a sheet of kitchen paper then assemble the burger.

Place a bed of Zuni pickle onto the bun then gently put the burger patty on top.

Add a generous spoon Burger sauce on top of the patty then place the top of the bun on top.

Serve with napkins.
